Apple Nut Bread


3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped walnuts
3 cups finely chopped peeled Jonathan or McIntosh apples, or about 3 medium apples

1 cup vegetable oil
2 cups sugar
3 eggs, slightly beaten 2 teaspoons cinnamon


Preheat the oven to 300 degrees. Mix the flour, baking soda, salt, walnuts and apples in a large bowl. Add the oil, sugar, eggs and cinnamon; mix just until moistened. Spoon into 2 greased and floured 3 x 7-inch loaf pans. Bake at 300 degrees for 1 1/2 hours or until tester comes out clean. Remove to a wire rack to cool.
